Preheat oven 300F
Place oats, coconut flakes, all nuts, pumpkin seeds, egg white, agave, coconut oil, cinnamon, salt and cayenne pepper in a mixing bowl and stir to combine well. Spread mixture out evenly on an 11X17 baking sheet. Place in oven for 40-45 minutes, stirring mixture with spatula every 10 minutes, until granola is evenly golden brown. Remove from heat, allow to cool about five minutes then stir in cranberries, apricots and banana chips. Store cooled granola in an airtight container.
Enjoy granola alone as a snack, with ice cold milk or with your favorite yogurt and berries!
